Roasted New Potatoes

I love potatoes! Recently I have begun to add half of a red onion when I roast potatoes and they are so much better than the used to be. I have always added either fresh rosemary or thyme. This is very simple to prepare. Add a few tablespoons of olive oil to an oven proof pan. 

Rinse and cut potatoes into 4ths or 8ths depending on their size. Add to pan along with a 1/2 onion cut lengthwise to making slivers. They can burn so you want them larger than the potatoes. Toss in herbs and S&P. Roast at 375 for an hour. If not browned let them go another 10 minutes.
